1 lb boneless skinless chicken (2-3 large breasts)
1 32 oz container chicken broth
2 (14.5 oz) cans diced tomatoes
1 1/2 cup chopped carrots
1 1/2 cup chopped celery
1 cup chopped onion
1 cup chopped red bell pepper
1 cup chopped cilantro
1 1/2 cup water
1/4 cup tomato paste
2 tsp minced garlic
1 tsp kosher salt
1 tsp cumin
1/2 tsp chili powder
1/2 lime juiced

Combine all ingredients in a crock pot and cook on high for 3-4 hours or low for 6-8. Cook until the chicken shreds easily and the vegetables are tender. Shred chicken and serve immediately.
